Happy Cinco de Mayo to everyone! Or as I like to call it, the Mexican St. Patrick’s Day. A common misconception of Cinco de Mayo is that it’s the celebration of Mexico’s Independence Day, which is actually Sept. 15. Cinco de Mayo actually commemorates the Mexican army’s unlikely defeat of French forces at the Battle of Puebla on May 5, 1862, under the leadership of Mexican General Ignacio Zaragoza Seguín.
